In the Unifine Processthe grain enters a high speed rotor and is instantly shattered into fineflour - even the bran and germ are burst! Air goes through the rotor withthe grain and blows the flour out, thus keeping it cool throughout theprocess, retaining many nutrients. With the Unifine Process the naturaloils in the grain are kept intact and do not get hot like in regular grainmilling and stoneground milling. Higher in fat than wheat flour, quinoa flour makes baked goods moister.Quinoa flour has a pleasant, nutty taste.
